
Move over,
! This Marry Me Shrimp recipe is easy and oh-so irresistible. It combines the robust flavours of sun-dried tomatoes and large shrimp with a luxurious, creamy sauce that clings to the shrimp.
Ingredients:
680 g large shrimp peeled and deveined
3 tbsp. (45 mL) olive oil
1/2 tsp (2.5 mL) paprika
1/2 tsp (2.5 mL) garlic powder
3 tbsp. (45 mL) salted butter
1 onion finely diced
3 garlic cloves grated
4 tbsp. (60 mL) tomato paste
1/2 cup (125 mL) white wine
1/2 cup (125 mL) sun-dried tomatoes packed in oil patted dry and chopped
1/2 cup (125 mL) heavy cream
2 tbsp. (30 mL) chopped basil
Salt and pepper
Warm crusty bread for serving
Instructions:
Pat the shrimp dry with paper towels and place them in a bowl season with salt and pepper, paprika, and garlic powder. Mix well.
In a large skillet, add the olive oil and heat to medium, add in the seasoned shrimp and cook for 2-3 minutes until golden brown. Transfer to a plate and set aside.
To the same skillet, add the butter, onion and grated garlic cloves and sauté on medium heat for 2-3 minutes, until softened. Add the tomato paste and cook for 1-2 minutes until deep red and lightly caramelized.
Deglaze the pan by adding in the white wine and cook for 1 minute, then add the chopped sun-dried tomatoes and heavy cream. Stir to combine. Season with salt and pepper.
Return the shrimp to the skillet simmer everything for about 5 minutes or until the shrimp are cooked through. Garnish with fresh chopped basil and serve with warm crusty bread.
