1 cup butter
1 cup granulated sugar
1 large egg
1 tsp. vanilla
2¼ cups all-purpose flour
1 tsp baking powder
¼ tsp baking soda
1/3 cup sparkling sugar
Strawberry dough
½ tsp. strawberry extract
2 tbsp. flour
Pink gel food colouring
Chocolate dough
1½ tbsp. cocoa powder
Preheat your oven to 350 F. Line a baking sheet with parchment paper or silicone baking mat.
In a stand mixer outfitted with a paddle attachment, cream butter and sugar together until well combined. Add egg and vanilla extract, and beat until light and fluffy.
Mix flour, baking soda and baking powder in a bowl. Add to mixer and mix until dough comes together. Remove and weigh dough and divide into 3 portions.
To the first portion, add strawberry extract, flour, and pink gel food colouring. Knead dough until the colour is even. Set aside.
To the second portion, add cocoa powder and knead until smooth. Set aside. Weigh each flavoured dough and divide each dough into 24 equal portions and roll each portion into a ball.
To assemble the cookies: Take a tablespoon-sized portion of each dough and roll them into separate balls. Place one chocolate ball, one vanilla ball, and one strawberry ball side by side. Gently press them together to form a larger ball, then flatten slightly to create a cookie shape.

Place the cookies onto the prepared baking sheet, leaving some space between each cookie. Sprinkle with sparkling sugar. Bake in the preheated oven for 10-12 minutes, or until the edges are set and slightly golden.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Makes 24 cookies.
