Spicy Maple Broiled Steelhead

4 pcs fresh steelhead fillets (about 175g each)

2 tbsp (30 mL) olive oil

1/4 cup (60 mL) maple syrup

2 tbsp (30 mL) light soy sauce

1 tbsp (15 mL) siracha (adjust to taste)

2 cloves garlic, minced

1/2 tsp (2.5 mL) lemon pepper

1/4 tsp (1 mL) salt

Fresh ground pepper

1 jalapeño, thinly sliced (optional)

For the marinade: In a small bowl, whisk together the olive oil, maple syrup, light soy sauce, siracha, minced garlic, lemon pepper and salt. Place the steelhead fillets in a shallow dish or resealable plastic bag. Pour the marinade over the steelhead, ensuring each fillet is well coated. Marinade for at least 30 minutes or overnight in the refrigerator.

Move oven rack to within 6-inches of the broiling element. Preheat oven to broil.

Line baking tray with aluminum foil for easy cleanup. Lightly coat or spray foil with olive oil to prevent fish from sticking. Arrange marinated steelhead fillets on the prepared baking sheet, skin-side down. Season the fillets lightly with fresh ground pepper. Top fillets with sliced jalapeño peppers, if using.

Broil for 8-10 minutes, or until the fillet flakes easily with a fork and is caramelized on top. The cooking time may vary depending on the thickness of the steelhead. Serve immediately with your favorite side dishes, such as steamed vegetables, rice or a salad.

If it’s too hot to broil the fish indoors, you can easily cook your steelhead fillets on an outdoor grill. Here’s how:

Preheat grill to medium-high heat. Brush grill grates with oil to prevent sticking. Place marinated steelhead fillets on the grill, skin-side down and close grill lid. Grill for 10 minutes or until the fillets flake easily with a fork. There is no need to flip fillets. Remove from grill and serve immediately as described above.

Tips:

For a more intense flavour, double the marinade. Reserve half of the marinade before adding it to the steelhead fillets. While steelhead is marinating, bring marinade to a boil. Reduce temperature and continue simmering until marinade is reduced by half. Set aside. To use, brush marinade on fish halfway through the broiling or grilling process and continue cooking until fillets are done.
