Milram introduces whipped cream for lactose intolerant

Milram’s lactose-free whipped cream is now available for people who suffer from lactose intolerance, but would still like to continue enjoying whipped cream, cake and creamy sauces.

The product can be used both hot and cold and has a high, airy volume, so it can be prepared in the same way as regular whipped cream.

The originally German dairy brand Milram, part of the DMK Group, was introduced to the foodservice market in the Netherlands last December. The brand’s innovative slightly sweet lactose-free whipped cream was even immediately nominated for a Horecava Innovation Award.

The demand for worthy dairy substitutes has increased enormously in recent years. About two per cent of adult Dutch people suffer from lactose intolerance, which can cause them to experience unpleasant (intestinal) complaints after eating or drinking products that contain lactose.

It is the most common food allergy in the country (it is even more common than gluten allergy, nut allergy and cow’s milk allergy). Milram’s lactose-free whipped cream has applications for use in all kinds of recipes and can be enjoyed by people with lactose intolerance.

Milram’s lactose-free high-quality whipped cream is not only a solution for guests who are lactose intolerant, it is also an ideal product for chefs to work with. They can now serve their familiar dishes without any worries and prepare them in the same way.

The lactose-free whipped cream consists of 35% fat, has a creamy structure and taste and is made from 100% cow’s milk (the lactose content is less than 0.01% per 100 grams). It has a good whipping volume, the standing quality is high (even after 48 hours), the colour is beautiful white and the lactose-free whipped cream is also very suitable for use in the preparation of hot dishes.

The preliminary process makes the taste of the lactose-free whipped cream slightly sweeter because the converted lactose into glucose and galactose gives it a sweet note. This means that less or even no sugar needs to be added. Thanks to its high consistency, it is also a pleasant whipped cream to use in the preparation of desserts.
